Easy Recipe – Mexican Corn Bread
I love this bread so much that I can eat Mexican cornbread by itself anytime, but it goes well with so many other foods. For a small party or get together, I would cut small wedges of cornbread and serve with slices of roast, chicken, ham or pork loin.

Super easy recipe below:

1 ½ cups self rising corn meal

2 eggs

1 cup sweet milk ( I use 2%)

½ cup Wesson oil (vegetable)

1 large chopped onion

1 small can cream corn

1 tablespoon sliced Jalapenos from jar (chopped)

1 ½ cups shredded sharp cheese

Mix all ingredients together in a large bowl. Heat cast iron skillet with a small amount of oil in oven for about 7 minutes. Pour mixture into hot skillet and cook at 400 degrees for about 45 minutes. You will need to increase or decrease the amount of Jalapenos depending on your own taste. Enjoy!

January is truly my month of hibernation. Therefore, my reason for few posts. I think January is a time of reflection and a transitional time into the new year. I do plan to make up for the lack of post this month and the rest of the year.
