Garden Bruschetta – Fresh Squash, Tomatoes, Peppers

Last weekend I was looking for a quick appetizer to make using fresh vegetables that I had from the garden. I decided to make Brushchetta and use fresh from our garden – tomatoes, banana peppers and squash.

Bruschetta, pronounced (bru-sketta) is an appetizer with Italian origins.

Besides the garden vegetables, I decided to add black olives, Vidalia onions, and Parmesan cheese to my recipe.

I chopped about three or four small ripe tomatoes, transferred to a small bowl and added a mixture of olive oil, pepper, garlic, pinch of salt and oregano. Let this mixture blend together with tomatoes while you prepare the remaining ingredients.

Next, I chopped very thin slices of two small and tender yellow squash. I coated them with a small amount of olive oil and put them in the oven boiler for a few minutes to add flavor and become tender. Be careful not to burn.

Next, I thinly sliced a small amount of onion and three small banana peppers and set aside. I graded the Parmesan cheese. I did not measure every ingredient so you can adjust your ingredients to your taste. We love cheese so I used a lot of it. I then sliced the olives and we also love olives so I used an entire can of drained olives.

Now the fun part – putting it together. I cut the bread lengthwise and placed on a flat cookie sheet. Drizzle the bread with the olive oil mixture and let broil briefly to brown just a bit. Next add a layer of your tender squash, onions, peppers, olives and finally tomatoes. Pour liquid from tomatoes mixture over the bread. Next I put in the broiler for a minute or so to heat through. I then removed bread, added cheese and returned to the broiler to melt the cheese.

Oh my goodness! This was amazing. My family could not get enough. I think this is healthy way to add fresh vegetables to your family’s diet. Simple, fresh ingredients.

Below is a quick list of the ingredients.

3 or 4 small ripe tomatoes                                       thin slices of Vidalia onion (to taste)

1/3 cup olive oil (add with salt, pepper, garlic, oregano)

3 small banana peppers                                           Parmesan cheese

1 loaf of bread (grocery bakery)                               2 small yellow squash
