Spicy Tuna Salad
If you need something easy to put together for the weekend try this tuna salad.  I made this recently and decided to share.  If you like spicy food, this recipe might just work for you!  Ingredients needed below:
7 boiled eggs (I used medium)                        2/3 cup sweet pickle relish
3 (5 oz.) cans tuna                                                 romaine lettuce
1 medium onion                                                    tomato wedges
1/2 cup mayo                                                         1 teaspoon Tiger Sauce
1/4 cup mustard                                                   1/2 to 1 teaspoon black pepper
 Drain tuna.  Chop eggs and onion (fine) and mix with tuna, mayo, mustard, pepper and pickle relish.  Add Tiger Sauce last and mix. Serve on a bed of lettuce with tomato wedges and assortment of crackers.  (I added extra Tiger Sauce to mine because I like the spicy hot zingy flavor!)
Oh, I forgot I had to use bread and butter pickles that my husband canned because I was out of sweet pickle relish and it was so good.  Also added some Mandarin orange slices.  I hope you like this recipe. See pictures below of the Tiger Sauce.

This is a picture of the Tiger Sauce “Original”.  On the back of the bottle it says Reily Foods Company, New Orleans, LA.  It has a sweet and sour tangy taste and is great in soups, dips, seafood and poultry.
